Garlic & Lemon Chicken with Green Beans & Red Potatoes
Ingredients:
- 6 tablespoons olive oil – Divided (1 tablespoon and 5 tablespoons)
- 2 lemons – 1 very thinly sliced and 1 juiced
- 4 cloves garlic – minced
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- ¾ pound trimmed green beans
- 8 small red potatoes – quartered (ensure they are small red potatoes)
- 4 chicken breasts – bone-in with skin (approximately 3 ¼ pounds)
Directions:
Prepare Chicken for Overnight Marination – Recommended
- In a large bowl, combine 5 tablespoons olive oil, lemon juice, minced garlic, salt, and pepper.
- Coat each chicken piece well in the olive oil and lemon mixture. Cover and refrigerate overnight. Occasionally stir the chicken in the marinade for re-coating.
When Ready to Prepare the Dish
- Preheat the oven to 400°F.
- Coat a large baking dish or cast-iron skillet with 1 tablespoon of olive oil.
- Arrange lemon slices in a single layer at the bottom of the dish or skillet.
If You Did Not Marinate the Chicken Overnight
- In a large bowl, combine 5 tablespoons olive oil, lemon juice, minced garlic, salt, and pepper.
- Add green beans, toss to coat, then use a slotted spoon or tongs to arrange them on top of the lemon slices.
- Add potatoes to the olive oil mixture, toss to coat, and use a slotted spoon or tongs to arrange them along the inside edge of the dish or skillet on top of the green beans.
- Coat the chicken thoroughly in the same olive oil mixture. Place chicken, skin-side up, in the dish or skillet.
- Pour any remaining olive oil mixture over the chicken.
