Garlic & Lemon Chicken with Green Beans & Red Potatoes


Garlic & Lemon Chicken with Green Beans & Red Potatoes

Ingredients:

  • 6 tablespoons olive oil – Divided (1 tablespoon and 5 tablespoons)
  • 2 lemons – 1 very thinly sliced and 1 juiced
  • 4 cloves garlic – minced
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ¾ pound trimmed green beans
  • 8 small red potatoes – quartered (ensure they are small red potatoes)
  • 4 chicken breasts – bone-in with skin (approximately 3 ¼ pounds)

Directions:

Prepare Chicken for Overnight Marination – Recommended

  1. In a large bowl, combine 5 tablespoons olive oil, lemon juice, minced garlic, salt, and pepper.
  2. Coat each chicken piece well in the olive oil and lemon mixture. Cover and refrigerate overnight. Occasionally stir the chicken in the marinade for re-coating.

When Ready to Prepare the Dish

  1. Preheat the oven to 400°F.
  2. Coat a large baking dish or cast-iron skillet with 1 tablespoon of olive oil.
  3. Arrange lemon slices in a single layer at the bottom of the dish or skillet.

If You Did Not Marinate the Chicken Overnight

  1. In a large bowl, combine 5 tablespoons olive oil, lemon juice, minced garlic, salt, and pepper.
  2. Add green beans, toss to coat, then use a slotted spoon or tongs to arrange them on top of the lemon slices.
  3. Add potatoes to the olive oil mixture, toss to coat, and use a slotted spoon or tongs to arrange them along the inside edge of the dish or skillet on top of the green beans.
  4. Coat the chicken thoroughly in the same olive oil mixture. Place chicken, skin-side up, in the dish or skillet.
  5. Pour any remaining olive oil mixture over the chicken.
