Garlic & Lemon Chicken with Green Beans & Red Potatoes
Ingredients:
- 6 Tbsp. olive oil – Divided (1 Tbsp. and 5 Tbsp.)
- 2 lemons – 1 very thinly sliced and 1 juiced
- 4 cloves garlic – minced
- 1 tsp. salt
- ½ tsp. freshly ground black pepper
- ¾ lb. trimmed green beans
- 8 small red potatoes – quartered (use small red potatoes)
- 4 chicken breasts – bone-in with skin (approximately 3 ¼ lbs. of chicken)
Directions:
Prepare Chicken to Marinate Overnight – Recommended
- In a large bowl, combine 5 Tbsp. olive oil, lemon juice, minced garlic, salt, and pepper.
- Coat each chicken piece well with the olive oil and lemon mixture. Cover and refrigerate overnight. Stir the chicken occasionally during marination to re-coat.
When Assembling the Dish (Next Day):
- Remove the chicken from the marinade and proceed to coat the green beans and potatoes.
- If you didn’t marinate the chicken overnight, combine 5 Tbsp. olive oil, lemon juice, minced garlic, salt, and pepper in a large bowl.
- Coat the green beans in the mixture and arrange them on top of the lemon slices in the baking dish.
- Toss the potatoes in the same olive oil mixture and arrange them along the inside edge of the dish on top of the green beans.
- Coat the chicken thoroughly in the olive oil mixture and place it, skin-side up, in the dish.
- Pour any remaining olive-oil mixture over the chicken.
When Ready to Prepare the Dish:
- Preheat the oven to 400° F.
- Coat a large baking dish or cast-iron skillet with 1 Tbsp. of olive oil.
- Arrange the lemon slices in a single layer at the bottom of the dish.
