Garlic & Lemon Chicken with Green Beans & Red Potatoes

Ingredients:

  • 6 Tbsp. olive oil – Divided (1 Tbsp. and 5 Tbsp.)
  • 2 lemons – 1 very thinly sliced and 1 juiced
  • 4 cloves garlic – minced
  • 1 tsp. salt
  • ½ tsp. freshly ground black pepper
  • ¾ lb. trimmed green beans
  • 8 small red potatoes – quartered (use small red potatoes)
  • 4 chicken breasts – bone-in with skin (approximately 3 ¼ lbs. of chicken)

Directions:

Prepare Chicken to Marinate Overnight – Recommended

  1. In a large bowl, combine 5 Tbsp. olive oil, lemon juice, minced garlic, salt, and pepper.
  2. Coat each chicken piece well with the olive oil and lemon mixture. Cover and refrigerate overnight. Stir the chicken occasionally during marination to re-coat.

When Assembling the Dish (Next Day):

  1. Remove the chicken from the marinade and proceed to coat the green beans and potatoes.
  2. If you didn’t marinate the chicken overnight, combine 5 Tbsp. olive oil, lemon juice, minced garlic, salt, and pepper in a large bowl.
  3. Coat the green beans in the mixture and arrange them on top of the lemon slices in the baking dish.
  4. Toss the potatoes in the same olive oil mixture and arrange them along the inside edge of the dish on top of the green beans.
  5. Coat the chicken thoroughly in the olive oil mixture and place it, skin-side up, in the dish.
  6. Pour any remaining olive-oil mixture over the chicken.

When Ready to Prepare the Dish:

  1. Preheat the oven to 400° F.
  2. Coat a large baking dish or cast-iron skillet with 1 Tbsp. of olive oil.
  3. Arrange the lemon slices in a single layer at the bottom of the dish.
