Straight from the cherished recipe box of my grandmother, this version of the marshmallow fruit salad is a delightful twist, made even more enjoyable by its cool temperature. Ideal for festive gatherings or as a comforting summer indulgence, this cold fruit salad doubles up as a simple yet satisfying dessert. A tradition cherished by my family, this recipe is lovingly prepared by Aunt Jenny and graces our table every Easter, Thanksgiving, and Christmas without fail.

Ingredients:

  • 8 ounces of softened cottage cheese
  • 2 cups of heavy cream, plus extra for serving
  • 1 quart of peeled strawberries
  • 2 large bananas, sliced and diced
  • 20 ounces of drained crushed pineapple

Instructions:

Step One:

  1. In a mixing bowl, blend the cream cheese and strawberries.
  2. Gently fold in the crushed pineapple and sliced bananas.
  3. Drizzle the mixture over the cream mixture.

Step Two:

  1. Divide the mixture evenly into a 9×13 baking dish.

Step Three:

  1. Place the dessert in the refrigerator until it sets.
  2. Before serving, allow it to sit at room temperature for 10 minutes.
  3. Dip a knife into hot water and cut the chilled dessert into slices.
