Fried Potatoes, Onions, and Smoked Polish Sausage Recipe

Fried Potatoes, Onions, and Smoked Polish Sausage Recipe

Ingredients:

  • 1½ pounds of russet potatoes, diced into 1/2″ cubes.
  • 1 pound of sliced smoked sausage.
  • 2 tablespoons of olive oil.
  • ½ teaspoon of seasoned salt.
  • ½ teaspoon of Italian seasoning.
  • ½ large red bell pepper.
  • ½ large green bell pepper.
  • 1 small onion, diced.
  • Black pepper to taste.
  • Shredded Parmesan cheese, for garnish.

Instructions:

  1. In a large skillet, sauté the diced onion in a tablespoon of butter over medium heat until translucent and softened. Set aside once done.
  2. In the same skillet, heat a tablespoon of butter and a tablespoon of olive oil until melted. Add the diced potatoes, seasoned salt, Italian seasoning, and black pepper. Cover and simmer, turning occasionally, for about 15 minutes until the potatoes start to soften.
  3. Add the sliced sausage to the skillet and continue to cook for another 10 minutes until the sausage is heated through and the potatoes are tender.
  4. In a separate skillet, combine the diced bell peppers and sauté until they are soft and slightly crisp.
  5. Once everything is cooked, combine the sautéed onions and peppers with the potato and sausage mixture.
  6. If desired, sprinkle shredded Parmesan cheese over the dish before serving.
