How to Make French Onion Soup
White Sauce:
- In a 1-quart saucepan, melt butter and add flour. Cook on medium heat until the flour thickens and pulls away from the sides of the saucepan.
- Gradually pour in milk while stirring constantly. Add salt. The mixture should thicken to a pudding-like consistency. Stir constantly to prevent lumps. Set aside off the heat until ready to use for the soup.
Soup:
- In a 2-quart saucepan, place 3 tablespoons of butter and sliced onions. Cook over low to medium heat, stirring frequently, until the onions are soft and clear, but not brown.
- Add chicken broth, chicken bouillon cubes, salt, and pepper. Stir until completely heated through. Add the white sauce and Velveeta cheese.
- The white sauce will be thick as it has been removed from heat. Simmer on medium-low heat until the cheese is melted and all ingredients are blended, stirring constantly.
- Reduce temperature to warm and let it cook for an additional 30 to 45 minutes.
Serve with a garnish of shredded cheddar cheese and a couple of slices of warm dark Russian bread.
