Ingredients

  • 4 tablespoons butter
  • 2 tablespoons balsamic vinegar
  • 2/3 cup low sodium beef broth
  • 4 onions, peeled and sliced
  • 1 cup mozzarella cheese, shredded
  • 4 boneless, skinless chicken breasts
  • 1/2 cup parmesan cheese, shredded
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 4 cloves garlic, minced
  • 1 teaspoon thyme

Instructions

  1. Preheat the Oven: Preheat your oven to 200°C (400°F).
  2. Prepare the Baking Dish: Coat a baking dish with cooking spray.
  3. Cook the Onions: Heat a large skillet over medium-high heat. Melt the butter in the skillet, then add the sliced onions. Sauté for a few minutes until they become soft.
  4. Add Aromatics: Reduce the heat to medium-low. Add the minced garlic, pepper, and thyme to the onions, sautéing until fragrant.
  5. Deglaze the Skillet: Pour in the balsamic vinegar and beef broth. Stir well, ensuring you scrape the bottom of the skillet to incorporate the browned bits. Let the mixture simmer for about 10 minutes, or until the onions are caramelized.
  6. Layer the Dish: Spread one-third of the caramelized onions evenly in the prepared baking dish.
  7. Add the Chicken: Place the chicken breasts on top of the onion layer. Season the chicken with salt.
  8. Top with Onions and Cheese: Spread the remaining onions over the chicken breasts. Generously sprinkle shredded parmesan and mozzarella cheese over the onions.
  9. Bake: Place the baking dish in the preheated oven and bake for about 30 minutes, or until the chicken is fully cooked.
