French Onion Chicken Bake
Ingredients:
- 4 tablespoons of butter
- 2 tablespoons of balsamic vinegar
- 2/3 cup of low-sodium beef broth
- 4 onions, peeled and sliced
- 1 cup of shredded mozzarella cheese
- 4 boneless, skinless chicken breasts
- 1/2 cup of shredded Parmesan cheese
- 1/2 teaspoon of pepper
- 1/2 teaspoon of salt
- 4 cloves of garlic, minced
- 1 teaspoon of thyme
Instructions:
- Preheat the oven to 200°C (400°F) and grease a baking dish with cooking spray.
- Heat a large skillet over medium-high heat and melt the butter.
- Add the sliced onions to the skillet and sauté until soft.
- Reduce the heat to medium-low and add the minced garlic, pepper, and thyme. Sauté until fragrant.
- Stir in the balsamic vinegar and beef broth, ensuring to scrape the browned bits from the bottom of the skillet.
- Simmer the mixture for 10 minutes or until the onions caramelize.
- Spread 1/3 of the onion mixture evenly into the prepared baking dish.
- Place the chicken breasts on top of the onions and season with salt.
- Spread the remaining onions over the chicken and sprinkle with Parmesan and mozzarella cheese.
- Bake in the preheated oven for approximately 30 minutes or until the chicken is cooked through.
- Remove from the oven and let it rest for a few minutes before serving.
