French Onion Chicken Bake

Ingredients:

  • 4 tablespoons of butter
  • 2 tablespoons of balsamic vinegar
  • 2/3 cup of low-sodium beef broth
  • 4 onions, peeled and sliced
  • 1 cup of shredded mozzarella cheese
  • 4 boneless, skinless chicken breasts
  • 1/2 cup of shredded Parmesan cheese
  • 1/2 teaspoon of pepper
  • 1/2 teaspoon of salt
  • 4 cloves of garlic, minced
  • 1 teaspoon of thyme

Instructions:

  1. Preheat the oven to 200°C (400°F) and grease a baking dish with cooking spray.
  2. Heat a large skillet over medium-high heat and melt the butter.
  3. Add the sliced onions to the skillet and sauté until soft.
  4. Reduce the heat to medium-low and add the minced garlic, pepper, and thyme. Sauté until fragrant.
  5. Stir in the balsamic vinegar and beef broth, ensuring to scrape the browned bits from the bottom of the skillet.
  6. Simmer the mixture for 10 minutes or until the onions caramelize.
  7. Spread 1/3 of the onion mixture evenly into the prepared baking dish.
  8. Place the chicken breasts on top of the onions and season with salt.
  9. Spread the remaining onions over the chicken and sprinkle with Parmesan and mozzarella cheese.
  10. Bake in the preheated oven for approximately 30 minutes or until the chicken is cooked through.
  11. Remove from the oven and let it rest for a few minutes before serving.
