Fluffy Potato Dinner Rolls Recipe

Ingredients:

  • 1/4 cup of melted unsalted butter
  • 2 tablespoons of sugar
  • 1 cup of mashed potatoes (from approximately 2 medium potatoes)
  • 1/2 cup of warm milk
  • 2 1/4 teaspoons of active dry yeast (1 packet)
  • 4 cups of all-purpose flour
  • 1 teaspoon of salt
  • 1 large egg, beaten (for egg wash)

Instructions:

  1. Activate Yeast: In a large mixing bowl, combine warm milk, melted butter, sugar, and yeast. Allow the mixture to rest for 5-10 minutes until the yeast activates and forms a foamy layer.
  2. Incorporate Potatoes: Stir in the mashed potatoes into the yeast mixture until well combined.
  3. Combine Flour and Salt: Gradually add flour and salt to the mixture, stirring until a dough forms.
  4. Knead Dough: Transfer the dough onto a floured surface and knead for 5-7 minutes until it becomes smooth and elastic.
  5. First Rise: Place the dough in a greased bowl, cover it with plastic wrap or a kitchen towel, and let it rise in a warm place for 1-2 hours, or until it doubles in size.
  6. Shape Rolls: Once the dough has risen, punch it down and divide it into equal-sized portions. Shape each portion into a ball and place them in a greased baking pan, ensuring some space between each roll.
  7. Second Rise: Cover the rolls and allow them to rise for an additional 30-45 minutes, or until they double in size.
  8. Preheat Oven: Preheat your oven to 375°F (190°C).
  9. Brush with Egg Wash: Brush the tops of the rolls with the beaten egg wash.
  10. Bake: Place the baking pan in the preheated oven and bake for 15-20 minutes, or until the rolls turn golden brown.
