Famous Red Lobster Shrimp Scampi
Ingredients
- 1 lb medium shrimp, peeled and deveined
- 1 tablespoon pure olive oil
- 2 tablespoons finely chopped garlic
- 1 1/2 cups white wine (preferably Chardonnay)
- Juice of 1/2 fresh lemon
- 1 teaspoon Italian seasoning
- 1/2 cup softened butter
- 1 tablespoon chopped parsley
- 1/2 cup grated Parmesan cheese
Preparation
- Heat a cast iron skillet over medium heat and add olive oil.
- Add shrimp and cook until they are tender and no longer translucent. Remove shrimp from skillet and set aside.
- Add chopped garlic to the skillet and cook for 2-3 minutes, ensuring it does not brown.
- Pour in white wine and lemon juice, and cook until the wine is reduced by half. Stir in Italian seasoning.
- Reduce the heat to low and add the softened butter to the skillet. Be cautious not to let the pan get too hot, as this may cause the butter to separate.
- Return the cooked shrimp to the skillet, add chopped parsley, and season with salt and pepper to taste.
- Sprinkle grated Parmesan cheese over the dish before serving.
