Exquisite Coconut Cream Pie Delight 😋👌
Ingredients:
- 1 cup milk
- 1 cup sweetened flaked coconut
- 1 tsp light cream
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 2 eggs, separated
- 1 teaspoon vanilla
- 1 pie crust
- 8 ounces of whipped cream
Directions:
- Bake the pie crust according to the package directions and let it cool completely.
- Place milk and light cream in a bain-marie. Add sugar and bring to a gentle boil.
- Mix 2 tbsp. cornstarch with cold water. Ensure a smooth blend.
- In a separate bowl, beat egg yolks until light. Add the cornstarch mixture to the yolks, blending thoroughly.
- Incorporate the egg mixture into the milk mixture in the double boiler.
- Cook for 5 minutes, stirring constantly.
- Remove from heat. Add vanilla and coconut, stirring well. Let it stand for 30 minutes.
- Pour the mixture into the prepared crust. Cover with plastic wrap and refrigerate for 30 minutes or until set.
