Exquisite Coconut Cream Pie Delight 😋👌

Ingredients:

  • 1 cup milk
  • 1 cup sweetened flaked coconut
  • 1 tsp light cream
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 2 eggs, separated
  • 1 teaspoon vanilla
  • 1 pie crust
  • 8 ounces of whipped cream

Directions:

  1. Bake the pie crust according to the package directions and let it cool completely.
  2. Place milk and light cream in a bain-marie. Add sugar and bring to a gentle boil.
  3. Mix 2 tbsp. cornstarch with cold water. Ensure a smooth blend.
  4. In a separate bowl, beat egg yolks until light. Add the cornstarch mixture to the yolks, blending thoroughly.
  5. Incorporate the egg mixture into the milk mixture in the double boiler.
  6. Cook for 5 minutes, stirring constantly.
  7. Remove from heat. Add vanilla and coconut, stirring well. Let it stand for 30 minutes.
  8. Pour the mixture into the prepared crust. Cover with plastic wrap and refrigerate for 30 minutes or until set.
  9. Remove the plastic film and generously cover with whipped cream. Enjoy the lusciousness of this Coconut Cream Pie!
