Divine Chocolate Chip Yogurt Biscuits

Ingredients:

  • 2 cups of all-purpose flour
  • 1/4 cup of granulated sugar
  • 1 tablespoon of baking powder
  • 1/2 teaspoon of salt
  • 1/2 cup of cold, cubed unsalted butter
  • 1 cup of Greek yogurt
  • 1/2 cup of chocolate chips
  • 1 teaspoon of vanilla extract
  • 1 egg (for egg wash)
  • 1 tablespoon of milk (for egg wash)

Directions:

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt.
  3. Add the cold, cubed butter to the dry ingredients, and use a pastry cutter or fingertips to blend until it resembles coarse crumbs.
  4. Stir in the Greek yogurt, chocolate chips, and vanilla extract until a dough forms.
  5. Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
  6. Roll the dough to about 1-inch (2.5 cm) thickness and use a round biscuit cutter to cut out biscuits. Place them on the prepared baking sheet with space between each one.
  7. In a small bowl, whisk together the egg and milk to create an egg wash. Brush the tops of the biscuits with the egg wash.
  8. Bake in the preheated oven for 12-15 minutes until golden brown and cooked through.
  9. Remove from the oven and let them cool slightly on a wire rack.
