Divine Chocolate Chip Yogurt Biscuits
Ingredients:
- 2 cups of all-purpose flour
- 1/4 cup of granulated sugar
- 1 tablespoon of baking powder
- 1/2 teaspoon of salt
- 1/2 cup of cold, cubed unsalted butter
- 1 cup of Greek yogurt
- 1/2 cup of chocolate chips
- 1 teaspoon of vanilla extract
- 1 egg (for egg wash)
- 1 tablespoon of milk (for egg wash)
Directions:
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt.
- Add the cold, cubed butter to the dry ingredients, and use a pastry cutter or fingertips to blend until it resembles coarse crumbs.
- Stir in the Greek yogurt, chocolate chips, and vanilla extract until a dough forms.
- Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
- Roll the dough to about 1-inch (2.5 cm) thickness and use a round biscuit cutter to cut out biscuits. Place them on the prepared baking sheet with space between each one.
- In a small bowl, whisk together the egg and milk to create an egg wash. Brush the tops of the biscuits with the egg wash.
- Bake in the preheated oven for 12-15 minutes until golden brown and cooked through.
- Remove from the oven and let them cool slightly on a wire rack.
