Ingredients:

  • 1 cup frozen blueberries
  • 3 cups almond flour
  • 4 eggs
  • 2/3 cup sweetener of your choice
  • 5 oz plain Greek yogurt
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk the eggs. Add the Greek yogurt, vanilla extract, and sweetener, mixing until well combined.
  3. Gradually incorporate the almond flour and baking powder into the mixture, stirring until smooth.
  4. Gently fold in the frozen blueberries.
  5. Evenly distribute the batter into 10 muffin cups.
  6. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool completely before serving.
