Deluxe Peanut Butter Cookies
Ingredients:
- 2 cups of all-purpose flour
- 2 teaspoons of baking powder
- ½ teaspoon of baking soda
- ½ cup of softened butter
- ½ cup of peanut butter
- ½ cup of brown sugar
- ½ cup of white sugar
- 2 eggs
- 1 cup of quick-cooking oats
- ½ cup of shredded coconut
- ½ cup of chocolate chips
Instructions:
- Preheat the oven to 190 degrees C (375 degrees F) and line a large baking sheet with parchment paper.
- In a medium mixing bowl, combine the flour, baking soda, and baking powder. Whisk until thoroughly mixed.
- In another mixing bowl, cream together the peanut butter, softened butter, white sugar, and brown sugar until smooth and well combined.
- Gradually add the eggs to the butter mixture, beating well after each addition.
- Stir in the oats until evenly distributed.
- Fold in the shredded coconut and chocolate chips until incorporated into the dough.
- Roll 1 tablespoon of dough into small balls using your hands.
- Arrange the dough balls on the prepared baking sheet, leaving about 2 inches of space between each cookie.
- Flatten each dough ball with a fork.
- Bake in the preheated oven for 10 minutes or until golden brown.
- Remove from the oven and transfer the cookies to a wire rack to cool completely.
