Absolutely! Corn casserole can be prepared up to two days ahead of time. Simply cover the cooled casserole tightly with plastic wrap and refrigerate. When ready to serve, reheat in a preheated oven set to 300 degrees F for 10-20 minutes, or until warmed through.

Is it Possible to Freeze Corn Casserole?

Indeed, you can freeze corn casserole for up to three months. To do so, wrap the casserole in a layer of plastic wrap followed by a layer of aluminum foil. When you’re ready to enjoy it, thaw the casserole in the refrigerator and then reheat either in the oven or microwave.

Ingredients:

  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (14.75 ounce) can creamed corn
  • 1 (8.5 ounce) package dry cornbread mix
  • 1 cup sour cream
  • ½ cup butter, melted
  • 2 eggs, beaten

Instructions:

  1. Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a 9×9-inch baking dish.
  2. In a medium bowl, thoroughly combine the whole and creamed corn, cornbread mix, sour cream, melted butter, and beaten eggs.
  3. Spoon the mixture into the prepared baking dish.
  4. Bake in the preheated oven for approximately 45 minutes, or until the top is beautifully golden brown and a toothpick inserted into the center comes out clean.
