Deliciously Cheesy Scalloped Potatoes

Ingredients:

  • 2 pounds of thinly sliced potatoes
  • 1/4 cup of butter
  • 1 1/2 teaspoons of minced garlic
  • 3 tablespoons of all-purpose flour
  • 1 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 1 1/2 cups of milk
  • 2 cups of shredded cheddar cheese, divided

Instructions:

  1. Preheat the oven to 350°F. Butter an 8×8 or 7×10 pan. Arrange half of the sliced potatoes in the bottom of the pan.
  2. In a small saucepan over medium heat, melt the butter. Add minced garlic and cook for 1-2 minutes. Whisk in flour, salt, and pepper, and cook for another minute.
  3. Reduce heat to medium-low. Slowly whisk in the milk until smooth. Allow the mixture to simmer lightly to thicken. Then, stir in 3/4 cup of cheese until melted, and remove from heat.
  4. Pour half of the sauce over the layer of potatoes. Sprinkle approximately 1/2 cup of cheese on top. Arrange the remaining potato slices over the cheese. Then, pour the remaining sauce over the potatoes and sprinkle the remaining cheese on top.
  5. Bake uncovered for 50-60 minutes, or until the potatoes are fork-tender and the top is golden brown.
