Delicious Twice-Baked Potatoes Recipe

Ingredients:
- 4 large baking potatoes
- 1/2 cup sour cream
- 1/4 cup unsalted butter, softened
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk
- 4 slices bacon, cooked and crumbled (optional)
- 2 green onions, finely chopped
- Salt and pepper to taste
Instructions:
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and prick them with a fork a few times. Place them on a baking sheet and bake for about 1 hour, or until they are tender when pierced with a fork.
- Allow the potatoes to cool slightly. Cut each potato in half lengthwise, and carefully scoop out the insides, leaving a thin layer of potato attached to the skin. Place the scooped-out potato into a mixing bowl.
- In the mixing bowl with the scooped-out potato, add sour cream, softened butter, shredded cheddar cheese, and milk. Mash the mixture until smooth and well combined. Season with salt and pepper to taste.
- If you’re using bacon, fold in the crumbled bacon into the mashed potato mixture.
- Spoon the mashed potato mixture back into the potato skins, creating a rounded top. You can use a piping bag or simply use a spoon for this.
- Place the filled potatoes back onto the baking sheet. Bake in the oven for an additional 15-20 minutes, or until the tops are golden brown.
- Remove the twice-baked potatoes from the oven and sprinkle chopped green onions on top as a garnish.
