Delicious Potato Fritters with Refreshing Yogurt Sauce

Ingredients:

  • 2 large potatoes (about 500g)
  • Fresh parsley
  • Spring onions
  • Salt, pepper, and garlic powder to taste
  • 2 medium eggs
  • 2 large tablespoons (40g) of corn starch
  • Sweet paprika
  • 7g of coriander
  • Vegetable oil for frying

For the Sauce:

  • 120g of natural yogurt
  • Juice of half a lemon
  • Lemon zest
  • Fresh parsley
  • Half a cucumber
  • Salt and pepper to taste
  • 1 clove of garlic
  • Spicy sauce
  • Olive oil

Directions:

  1. Grate the potatoes and thoroughly squeeze out any excess moisture.
  2. In a mixing bowl, combine the grated potatoes with chopped parsley, spring onions, salt, pepper, garlic powder, eggs, corn starch, paprika, and coriander.
  3. Shape the mixture into pancakes and fry them in a pan with vegetable oil until golden brown on both sides.
  4. For the sauce, mix together yogurt, lemon juice and zest, chopped parsley, diced cucumber, salt, pepper, minced garlic, spicy sauce, and a drizzle of olive oil.
