Delicious Honey Baked Chicken Recipe

Ingredients:

  • 1/3 cup of honey
  • 1/4 cup of low sodium soy sauce
  • 1/4 cup of finely chopped green onions
  • 2 tablespoons of cooking oil (vegetable or canola)
  • 1 1/2 tablespoons of minced garlic (or 4 large cloves of garlic, minced)
  • 1 tablespoon of white vinegar (optional: apple cider or rice wine vinegar)
  • 1 teaspoon of sesame oil (optional)
  • 3/4 teaspoon of fresh minced ginger
  • 2 1/2 pounds (1.2 kg) of skinless, boneless chicken thighs
  • Salt and pepper to taste
  • Fresh chopped parsley for garnish

Directions:

  1. In a shallow bowl, mix together honey, soy sauce, green onions, cooking oil, garlic, vinegar, sesame oil, and ginger. Ensure thorough mixing and set aside.
  2. Pat dry the chicken thighs with a paper towel, removing any excess fat. Season with salt and pepper, then place them in the marinade bowl, ensuring they are well coated. Cover and let marinate for at least 30 minutes, ideally longer or overnight if time permits.
  3. Preheat the oven to 425°F (220°C).
  4. Transfer the marinated chicken along with the marinade into a cast-iron skillet or baking dish. Bake for 20-25 minutes, flipping the chicken twice during baking to prevent the top from drying out.
  5. Broil the chicken for 5 minutes on high heat until it turns golden brown and slightly charred on the edges. Ensure the internal temperature of the chicken reaches 165°F (or 70°C).
  6. Garnish the dish with chopped parsley and optional sesame seeds.
  7. Serve the honey baked chicken with the pan juices over your choice of accompaniment, such as steamed rice, cauliflower rice, zucchini noodles, regular noodles, or mashed potatoes.
