Delicious Homemade Potato Soup
Ingredients:
- 6 medium Russet potatoes, bite-sized
- 1 diced onion
- 3 peeled and sliced carrots
- 3 diced celery stalks
- 6 slices of crispy cooked bacon, crumbled
- 8 cups vegetable or chicken broth
- 1 cup milk
- ½ cup heavy cream
- 1 tsp minced parsley
- Salt and pepper to taste
- 3 tbsp flour (or corn starch as a substitute)
- 1 cup finely grated cheese of your choice
Instructions:
- Cook bacon in a soup pot until fat is crispy; set aside. Drain most bacon fat, retaining some in the pan.
- Return pan to medium heat, add onion, celery, and carrot. Stir and cook for two minutes.
- Add diced potatoes, salt, pepper, and preferred seasonings. Pour in broth and bring to a low boil.
- Cook for 10 minutes until potatoes begin to soften.
- Whisk flour and milk together, add to the pot, and stir continuously. Cook for an additional 5 minutes.
- Carefully remove ¼ to ½ of the soup and blend until smooth. Reincorporate it into the pot slowly to avoid splashing.
- Stir in crumbled bacon, reserving some for garnish.
- Serve in bowls, garnished with parsley, bacon, and a sprinkle of cheese. Enjoy your superb homemade potato soup!
