Delicious Gluten-Free Chicken Tenders with Sweet and Spicy Sauce

Ingredients:
For the Chicken Tenders:
- 1 cup blanched almond flour
- 1 tablespoon garlic powder
- 1 tablespoon dried parsley
- 2 teaspoons smoked paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 2 large eggs
- 12 chicken tenders (about 1 1/4-1 1/2 lbs)
- Olive oil cooking spray
For the Sweet and Spicy Sauce:
- 2 tablespoons butter
- 1/4 cup hot sauce
- 1 tablespoon honey
- 1 tablespoon tomato paste
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Instructions:
- In a shallow bowl, combine the almond flour, garlic powder, parsley, paprika, salt, and pepper. Mix well.
- In another shallow bowl, crack and whisk the eggs. Season with a pinch of salt and pepper.
- Set up an assembly line with the chicken tenders, egg mixture, and almond flour coating.
- Dip each chicken tender in the egg mixture, then coat with the almond flour mixture, pressing it in gently. Shake off any excess coating and place the coated chicken on a clean plate.
- Preheat the air fryer to 390 degrees F. Once heated, spray the basket with olive oil spray. Place some chicken tenders in a single layer in the basket and spray them with more olive oil spray. Cook for 7 minutes, then flip and cook for an additional 4 minutes.
- In a pan over medium heat, melt the butter. Add the hot sauce, honey, tomato paste, salt, and pepper. Whisk together and cook for about 2 minutes. Remove from heat and set aside.
- Serve the chicken tenders with the sweet and spicy sauce either by coating them all or drizzling the sauce over the top, along with an extra drizzle of honey if desired.
