Delicious and Easy Chicken Pot Pie Recipe
I recently tried a chicken pot pie recipe that I found, and it was incredibly simple to make. The only alteration I made was using a combination of cream of onion, cream of celery, and cream of chicken soups instead of just two cans of cream of chicken. Both my son and granddaughter absolutely adored it.
Ingredients:
- 1 can cream of chicken soup
- 1 can cream of onion soup
- 1 can cream of celery soup
- 1 rotisserie chicken
- 1 pack of Pillsbury pie dough
- 1 bag of frozen peas and carrots
- 2 potatoes, peeled and cubed (boil for 10 minutes, then drain)
Instructions:
- Preheat your oven to 375°F.
- For the best results, use a cast iron skillet.
- In a mixing bowl, combine the soups.
- Remove the chicken from the rotisserie and shred it.
- Add the shredded chicken to the soup mixture.
- Mix in the frozen peas and carrots, followed by the boiled and cubed potatoes.
- Place one pie shell in the bottom of the cast iron pan.
- Spoon the chicken mixture onto the pie shell.
- Cover with the second pie sheet, cutting slits on the top, and crimping the edges.
- Brush the top crust with egg wash.
- Bake for 45-55 minutes, or until the crust is golden brown.
- Let it stand for about 10 minutes before serving. Enjoy your delicious homemade chicken pot pie!
