Decadent Gooey Brownie Pie

Ingredients:

  • 6 tbsp of unsalted butter
  • 3 cups of semi-sweet chocolate chips, divided
  • 3 large eggs
  • 1 cup of granulated sugar
  • 1 tsp of vanilla extract
  • 1/2 cup of all-purpose flour
  • 1/4 tsp of baking powder
  • 1/4 tsp of salt
  • Hot fudge sauce for serving

Instructions:

  1. Preheat your oven to 350°F and generously grease a 9-inch pie plate or springform pan with non-stick spray.
  2. In a microwave-safe bowl, combine the butter and 2 cups of chocolate chips. Microwave in 30-second intervals, stirring each time, until the mixture is completely smooth. Let it cool slightly.
  3. In a separate large bowl, use a hand mixer on medium-high speed to beat the eggs, sugar, and vanilla together for about 3 minutes, until the mixture is light and fluffy.
  4. With the mixer on low, gradually pour in the slightly cooled melted chocolate mixture until it’s fully incorporated.
  5. Gently fold in the flour, baking powder, and salt using a rubber spatula, just until combined. Then, fold in the remaining 1 cup of chocolate chips.
  6. Pour the batter into the prepared pie plate or springform pan, spreading it evenly. Bake for 35-40 minutes, until the center is puffed up and the top is crackly. Keep in mind that the center will still be quite jiggly.
  7. Once baked, remove the pie from the oven and let it cool completely at room temperature.
  8. When ready to serve, slice the pie and drizzle hot fudge sauce over the top for an extra decadent touch.
