Decadent Chocolate-Mayonnaise Cake

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 5 tablespoons cocoa powder
  • 1 cup water
  • 1 cup granulated sugar
  • 1 cup mayonnaise
  • 1 teaspoon vanilla extract
  • 2 large eggs (optional)

Instructions:

  1. Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius). Grease a 9×13 inch baking pan with cooking spray and set it aside.
  2. In a medium bowl, sift together the flour, baking soda, and cocoa powder. Set aside.
  3. In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, combine the water, sugar, mayonnaise, eggs (if using), and vanilla extract. Beat until well blended.
  4. Gradually add the dry ingredients to the wet ingredients, mixing well after each addition, until a smooth batter forms.
  5. Pour the batter into the prepared baking pan, spreading it evenly.
  6. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Remove the cake from the oven and allow it to cool completely in the pan on a wire rack before serving.
