Ingredients:
Biscuit:
- 150g butter
- 150g sugar
- 4 eggs
- a pinch of salt
- 160g flour
- 10g vanilla sugar
- 15g baking powder
- 2 tablespoons cocoa powder
Coconut Cream:
- 4 tablespoons starch
- 800ml milk
- 150g sugar
- 10g vanilla sugar
- 150g butter
- 300g coconut flour
Toppings:
- 50ml warm milk
- 100g milk chocolate
Directions:
- Cake: Begin by creaming together the butter and sugar until smooth. Add the eggs one at a time, mixing well after each addition. In a separate bowl, sift together the flour, salt, vanilla sugar, baking powder, and cocoa powder. Gradually add the dry ingredients to the wet mixture, stirring until fully combined. Pour the batter into a greased baking dish and bake at 356°F (180°C) for 20-30 minutes or until a toothpick inserted into the center comes out clean.
- Coconut Cream Filling: In a saucepan, whisk together the milk, starch, sugar, and vanilla sugar. Add the butter and cook over medium heat, stirring constantly, until the mixture thickens. Once thickened, remove from heat and stir in the coconut flour until smooth and creamy.
- Chocolate Topping: Melt the milk chocolate in the warm milk, stirring until smooth and glossy.
- Assembly: Once the cake has cooled, spread the coconut cream filling evenly over the top. Then, pour the melted chocolate topping over the coconut cream layer, spreading it out with a spatula to cover the entire surface. Chill the assembled cake in the fridge for 2-3 hours to allow it to set.
