Creamy Yogurt Peanut Butter Popsicles
Ingredients:
- 1 cup Greek yogurt
- 1/4 cup peanut butter (or any nut butter of your choice)
- 1-2 tbsp sweetener of choice or 1 scoop vanilla protein powder
- Peanuts and dark chocolate chips/chunks
For the Chocolate Coating:
- 5 oz dark chocolate (dairy-free if preferred)
- 2 tsp coconut oil
Instructions:
- In a bowl, combine the Greek yogurt, peanut butter, and sweetener (or protein powder). Mix until smooth.
- Line a tray with parchment paper. Place 6 dollops of yogurt mixture on the tray, ensuring each dollop has a popsicle stick inserted, and cover the tips of the sticks with yogurt. Top the yogurt with chocolate chips/chunks or peanuts.
- Freeze the tray until the yogurt is firm.
- Once the yogurt is frozen, melt the dark chocolate and coconut oil together.
- Remove the popsicles from the tray and dip each one into the melted chocolate. Return them to the freezer until the chocolate is hardened.
- Once the chocolate coating is set, remove the popsicles from the freezer and enjoy. For a softer filling, allow them to sit at room temperature for 5-10 minutes before serving.
Notes:
- For a sugar-free option, use vanilla protein powder or monk fruit sweetener for the filling, and sugar-free dark chocolate for the coating.
- For a refined sugar-free version, use refined sugar-free dark chocolate or make your own chocolate coating with unsweetened chocolate (melt 2 oz unsweetened chocolate with 1 tbsp coconut oil, then stir in 1/4 cup sugar-free syrup).
