Ingredients:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 4 large eggs
  • 1 cup heavy cream

Directions:

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared
    pan to form the crust.
  3. In a large mixing bowl, beat cream cheese until smooth. Add sugar, peanut butter, and vanilla extract,
    continuing to beat until well combined.
  4. Add eggs one at a time, beating well after each addition. Pour in the heavy cream and mix until the batter is
    smooth.
  5. Pour the batter over the crust and smooth the top. Bake for 50-60 minutes or until the center is set.
  6. Allow the cheesecake to cool in the pan, then refrigerate for at least 4 hours or overnight.
  7. For the Chocolate Ganache:
  8. In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and pour over the
    chocolate chips. Let it sit for a minute, then stir until smooth.
  9. Pour the ganache over the chilled cheesecake and spread it evenly.
