Creamy Peanut Butter Cheesecake with Chocolate Ganache

Ingredients:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup creamy peanut butter
- 1 tsp vanilla extract
- 4 large eggs
- 1 cup heavy cream
Directions:
- Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared
pan to form the crust. - In a large mixing bowl, beat cream cheese until smooth. Add sugar, peanut butter, and vanilla extract,
continuing to beat until well combined. - Add eggs one at a time, beating well after each addition. Pour in the heavy cream and mix until the batter is
smooth. - Pour the batter over the crust and smooth the top. Bake for 50-60 minutes or until the center is set.
- Allow the cheesecake to cool in the pan, then refrigerate for at least 4 hours or overnight.
- For the Chocolate Ganache:
- In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and pour over the
chocolate chips. Let it sit for a minute, then stir until smooth. - Pour the ganache over the chilled cheesecake and spread it evenly.
