Ingredients

  • 2 pounds of potatoes (Yukon Gold or baby potatoes preferred), peeled and quartered
  • 4 cloves of garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1 cup chicken or vegetable broth
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped for garnish

Directions

  1. In a large pot or Dutch oven, heat the butter and olive oil over medium heat until the butter is melted and foamy.
  2. Add the finely chopped onion and sauté until it becomes translucent and slightly golden, about 3 minutes.
  3. Stir in the minced garlic and cook for another 1-2 minutes until fragrant, being careful not to let the garlic burn.
  4. Add the quartered potatoes to the pot, tossing them with the onions and garlic to coat them evenly.
  5. Pour in the heavy cream and broth. Sprinkle in the dried thyme and gently stir to combine.
  6. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it stew for about 20-25 minutes, or until the potatoes are fork-tender.
  7. Season with salt and freshly ground black pepper to taste.
  8. Once the potatoes are tender and the sauce has thickened slightly, remove the pot from heat and let it rest for a few minutes.
  9. Serve in a bowl or on a platter, garnished with chopped fresh parsley for added color and freshness.
