  • 9 lasagna noodles, cooked al dente
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 1/2 pounds cooked chicken breasts, shredded
  • 2 1/2 cups ricotta cheese
  • 1 cup grated Parmesan cheese, divided
  • 1 large egg
  • 3 cups grated mozzarella cheese
  • 1/4 cup chopped fresh basil leaves
  • 1/4 cup fresh parsley leaves, finely chopped
  • Salt and pepper, to taste
  • 3 cups béchamel or Alfredo sauce, to taste
  • 1 teaspoon nutmeg (optional)

Preparation:

  1. Preheat the oven to 190°C (375°F) and grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, heat the olive oil. Sauté the onion and garlic until translucent.
  3. Add the shredded chicken to the skillet, heat thoroughly, and then remove from heat.
  4. In a separate bowl, combine the ricotta, 1/2 cup Parmesan, egg, basil, and parsley. Season with salt and pepper.
  5. Spread a layer of béchamel or Alfredo sauce on the bottom of the baking dish. Arrange three lasagna noodles on top, followed by half of the ricotta mixture, half of the chicken, 1 cup of mozzarella, and a dollop of sauce.
  6. Repeat the layering process with the remaining ingredients.
  7. Finish with a layer of lasagna noodles, béchamel sauce, remaining mozzarella, and Parmesan. Sprinkle with nutmeg if desired.
  8. Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and continue baking until golden brown and bubbly, about 10 to 15 minutes more.
  9. Let the lasagna cool for 10 minutes before serving to allow the layers to set.
