Creamed Chicken and Biscuits Casserole
Ingredients:
- 1 ½ teaspoons of butter
- 1 small onion, finely chopped
- 2 pounds of cooked chicken, diced or shredded
- 1 can of cream of chicken soup
- ½ cup of mayonnaise
- 1 cup of milk
- ½ cup of roasted red pepper, finely chopped
- 1 ½ cups of mild cheddar cheese
- 1 can of refrigerated biscuit dough
Instructions:
- Preheat the oven to 350°F (175°C) and grease the bottom and sides of a baking dish.
- In a skillet, melt the butter over medium heat, then add the chopped onion. Sauté until the onion becomes translucent and begins to soften.
- In a large mixing bowl, combine the cooked chicken, cream of chicken soup, mayonnaise, milk, and chopped red peppers. Add the sautéed onion and mix well.
- Pour the mixture into the prepared baking dish, spreading it evenly.
- Bake for 15 minutes, then remove from the oven. Sprinkle 1 cup of cheddar cheese over the top of the casserole, then arrange the biscuit dough on top in a single layer.
- Sprinkle the remaining cheese over the biscuits.
- Return the baking dish to the oven and bake for an additional 20 minutes, or until the biscuits are golden brown and the cheese is melted and bubbly.
- Allow the casserole to cool for a few minutes before serving.
