Creamed Chicken and Biscuits Casserole

Ingredients:

  • 1 ½ teaspoons of butter
  • 1 small onion, finely chopped
  • 2 pounds of cooked chicken, diced or shredded
  • 1 can of cream of chicken soup
  • ½ cup of mayonnaise
  • 1 cup of milk
  • ½ cup of roasted red pepper, finely chopped
  • 1 ½ cups of mild cheddar cheese
  • 1 can of refrigerated biscuit dough

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease the bottom and sides of a baking dish.
  2. In a skillet, melt the butter over medium heat, then add the chopped onion. Sauté until the onion becomes translucent and begins to soften.
  3. In a large mixing bowl, combine the cooked chicken, cream of chicken soup, mayonnaise, milk, and chopped red peppers. Add the sautéed onion and mix well.
  4. Pour the mixture into the prepared baking dish, spreading it evenly.
  5. Bake for 15 minutes, then remove from the oven. Sprinkle 1 cup of cheddar cheese over the top of the casserole, then arrange the biscuit dough on top in a single layer.
  6. Sprinkle the remaining cheese over the biscuits.
  7. Return the baking dish to the oven and bake for an additional 20 minutes, or until the biscuits are golden brown and the cheese is melted and bubbly.
  8. Allow the casserole to cool for a few minutes before serving.

This Creamed Chicken and Biscuits Casserole can be served as a standalone meal or paired with a side salad for a complete dinner experience. Enjoy!
