Cowboy Meatloaf and Potato Casserole

Ingredients:
- ¾ cup finely chopped onion
- ⅓ cup dried bread crumbs
- 1 pound lean ground beef
- ¼ cup your favorite barbecue sauce
- 2 tsp chili powder
- ¾ tsp salt
- 1 egg, beaten
For the Potato Layer:
- Potatoes
- 1 package instant butter-flavored mashed potato mix
- ⅔ cup evaporated milk
- 1 tbsp chopped parsley
- 1 tbsp butter
- 1 tsp garlic powder
- 1 cup cooked and crumbled bacon
- ¼ cup crispy fried onions
- ⅔ cup shredded Monterey Jack cheese
Preparation:
- Preheat the oven to 375°F and lightly spray a 9×9 baking pan.
- In a large bowl, combine the ground beef, chopped onion, barbecue sauce, bread crumbs, beaten egg, chili powder, and salt.
- Press the meat mixture evenly into the bottom of the prepared baking pan.
- Bake uncovered for 20 minutes.
- Carefully remove from the oven and drain any excess grease.
- In another bowl, prepare the instant mashed potatoes according to package instructions. Mix in evaporated milk, chopped parsley, butter, garlic powder, bacon, and crispy fried onions.
- Spread the prepared mashed potatoes evenly over the cooked meat layer in the baking pan.
- Sprinkle shredded Monterey Jack cheese, bacon, and additional crispy fried onions over the mashed potatoes.
- Place the casserole under the broiler, about 6 inches from the heat source, and broil for 3 minutes or until the cheese is melted and bubbly.
- Serve with extra barbecue sauce on the side, if desired.
