Gather the whole family around for a mouthwatering Cowboy Meatloaf and Potato Casserole! This BBQ-infused cowboy meatloaf dish is sure to have everyone clamoring for seconds.

Ingredients:

  • ¾ cup finely chopped onion
  • ⅓ cup dried bread crumbs
  • 1 pound lean ground beef
  • ¼ cup your favorite barbecue sauce
  • 2 tsp chili powder
  • ¾ tsp salt
  • 1 egg, beaten

For the Potato Layer:

  • Potatoes
  • 1 package instant butter-flavored mashed potato mix
  • ⅔ cup evaporated milk
  • 1 tbsp chopped parsley
  • 1 tbsp butter
  • 1 tsp garlic powder
  • 1 cup cooked and crumbled bacon
  • ¼ cup crispy fried onions
  • ⅔ cup shredded Monterey Jack cheese

Preparation:

  1. Preheat the oven to 375°F and lightly spray a 9×9 baking pan.
  2. In a large bowl, combine the ground beef, chopped onion, barbecue sauce, bread crumbs, beaten egg, chili powder, and salt.
  3. Press the meat mixture evenly into the bottom of the prepared baking pan.
  4. Bake uncovered for 20 minutes.
  5. Carefully remove from the oven and drain any excess grease.
  6. In another bowl, prepare the instant mashed potatoes according to package instructions. Mix in evaporated milk, chopped parsley, butter, garlic powder, bacon, and crispy fried onions.
  7. Spread the prepared mashed potatoes evenly over the cooked meat layer in the baking pan.
  8. Sprinkle shredded Monterey Jack cheese, bacon, and additional crispy fried onions over the mashed potatoes.
  9. Place the casserole under the broiler, about 6 inches from the heat source, and broil for 3 minutes or until the cheese is melted and bubbly.
  10. Serve with extra barbecue sauce on the side, if desired.
