Classic Vanilla Cheesecake
Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
For the Topping:
- 1 cup sour cream
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
Directions:
- Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan.
- In a large bowl, beat together the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
- Add the eggs, one at a time, mixing well after each addition.
- Fold in the sour cream until smooth.
- Pour the cheesecake filling over the crust and smooth the top with a spatula.
- Bake for 50-55 minutes or until the center is set and the edges are lightly browned.
- While the cheesecake is cooling, prepare the topping by mixing together sour cream, sugar, and vanilla extract. Spread over the cooled cheesecake.
