Classic Southern Potato Salad

Ingredients:

  • 3 lbs russet potatoes
  • 1 cup mayonnaise, adjust to taste
  • ¼ cup Dijon mustard
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons sugar
  • ½ cup sweet pickles, diced
  • 1 stalk celery, finely chopped
  • 1 medium-sized onion, finely diced
  • 4 large eggs, hard-boiled and chopped
  • Salt and pepper to taste

Instructions:

  1. In a large pot, bring water to a boil. Add the potatoes and cook until they are easily pierced with a knife.
  2. Once cooked, transfer the potatoes to a bowl of ice water to cool rapidly. Peel off the skins and cut the potatoes into large chunks.
  3. In a separate mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, and sugar. Mix well until smooth.
  4. Pour the dressing over the potatoes. Add sweet pickles, celery, onion, and chopped hard-boiled eggs.
  5. Season with salt and pepper to taste.
  6. Gently toss all ingredients until evenly coated.
  7. Optionally, garnish the top with slices of hard-boiled egg for presentation.
