Classic Southern Potato Salad
Ingredients:
- 3 lbs russet potatoes
- 1 cup mayonnaise, adjust to taste
- ¼ cup Dijon mustard
- 2 teaspoons apple cider vinegar
- 2 teaspoons sugar
- ½ cup sweet pickles, diced
- 1 stalk celery, finely chopped
- 1 medium-sized onion, finely diced
- 4 large eggs, hard-boiled and chopped
- Salt and pepper to taste
Instructions:
- In a large pot, bring water to a boil. Add the potatoes and cook until they are easily pierced with a knife.
- Once cooked, transfer the potatoes to a bowl of ice water to cool rapidly. Peel off the skins and cut the potatoes into large chunks.
- In a separate mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, and sugar. Mix well until smooth.
- Pour the dressing over the potatoes. Add sweet pickles, celery, onion, and chopped hard-boiled eggs.
- Season with salt and pepper to taste.
- Gently toss all ingredients until evenly coated.
- Optionally, garnish the top with slices of hard-boiled egg for presentation.
