Classic Blueberry Buckle
Ingredients
For the Buckle:
- 2 cups cake flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 4 tablespoons butter, at room temperature
- 3/4 cup sugar
- 1 egg
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 3 cups fresh or frozen blueberries
For the Streusel Topping:
- 1/2 cup sugar
- 1/3 cup cake flour
- 1/2 teaspoon cinnamon
- 4 tablespoons cold butter, cubed
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×9-inch baking dish.
- In a bowl, whisk together the cake flour, baking powder, and salt.
- In a separate bowl, cream the butter and sugar until the mixture is light and fluffy. Beat in the egg and vanilla extract until well combined.
- Gradually add the flour mixture and milk to the butter mixture, alternating between the two and mixing just until combined.
- Gently fold in the blueberries.
- Spread the batter evenly into the prepared baking dish.
- To prepare the streusel topping, combine the sugar, cake flour, and cinnamon in a bowl. Cut in the cold butter using a pastry cutter or your fingers until the mixture becomes crumbly.
- Sprinkle the streusel topping evenly over the batter.
- Bake for 35-40 minutes, or until a toothpick inserted into the center of the buckle comes out clean.
- Allow the buckle to cool in the baking dish for at least 10 minutes before serving warm or at room temperature.
