Classic Blueberry Buckle

Ingredients

For the Buckle:

  • 2 cups cake flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 tablespoons butter, at room temperature
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 3 cups fresh or frozen blueberries

For the Streusel Topping:

  • 1/2 cup sugar
  • 1/3 cup cake flour
  • 1/2 teaspoon cinnamon
  • 4 tablespoons cold butter, cubed

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×9-inch baking dish.
  2. In a bowl, whisk together the cake flour, baking powder, and salt.
  3. In a separate bowl, cream the butter and sugar until the mixture is light and fluffy. Beat in the egg and vanilla extract until well combined.
  4. Gradually add the flour mixture and milk to the butter mixture, alternating between the two and mixing just until combined.
  5. Gently fold in the blueberries.
  6. Spread the batter evenly into the prepared baking dish.
  7. To prepare the streusel topping, combine the sugar, cake flour, and cinnamon in a bowl. Cut in the cold butter using a pastry cutter or your fingers until the mixture becomes crumbly.
  8. Sprinkle the streusel topping evenly over the batter.
  9. Bake for 35-40 minutes, or until a toothpick inserted into the center of the buckle comes out clean.
  10. Allow the buckle to cool in the baking dish for at least 10 minutes before serving warm or at room temperature.
