Ingredients:

  • 600g of prime Irish beef blade, cut into 2.5cm cubes
  • 3 teaspoons of aromatic paprika
  • 4.5 tablespoons of high-quality flour
  • 90g of unsalted butter
  • 3 coarsely chopped onions
  • 5 dl of Guinness beer
  • 4 bay leaves
  • 4 sprigs of fresh thyme
  • 1 large leek, thinly sliced
  • 2 carrots, diced into 1cm pieces
  • Freshly ground black pepper
  • Sea salt to taste

Preparation:

  1. Season the beef cubes with a generous sprinkle of black pepper and paprika. Thoroughly mix in the flour for a delightful coating.
  2. In a skillet, melt the butter and brown the seasoned beef cubes. Incorporate the chopped onions, sautéing for approximately 1 minute.
  3. Deglaze the pan with the richness of Guinness, introducing the bay leaves and thyme. Cover the pan, reduce the heat, and let it simmer gently for around 1.5 hours. Stir occasionally for optimal flavor infusion.
  4. Integrate the leeks and diced carrots into the stew, allowing it to simmer for an additional hour. Season with black pepper and sea salt to elevate the taste to perfection.
