Ingredients:

Dry Ingredients:

  • 2 cups sugar
  • 2 cups cake flour
  • 2 tsp baking powder
  • 1 & 1/2 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1/2 cup cocoa powder

Wet Ingredients:

  • 2 tsp granulated coffee, dissolved in a cup of hot water
  • 2 eggs
  • 1 cup milk
  • 1/2 cup oil
  • 2 tsp vanilla essence

Instructions:

  1. Preheat the oven to 180°C.
  2. In a large bowl, sift together all the dry ingredients. Combine the milk with the coffee mixture and stir well.
  3. Add the wet ingredients to the dry ingredients, whisking until thoroughly combined.
  4. Pour the batter into a greased baking tin and bake for 35 minutes. Once baked, remove from the oven and allow to cool completely.
  5. Decorate the cooled cake with freshly whipped cream, milk chocolate shavings, berries, caramel, or a thick chocolate ganache made from melted chocolate and cream stirred together.
  6. The recipe is designed for a rectangle baking tin measuring 30-33cm, but you can also divide the batter into two standard round baking tins and bake for 20-25 minutes. For larger oven trays, simply double the ingredients.
