Decadent Chocolate Slab Cake Recipe by Fatima Sydow

Ingredients:
Dry Ingredients:
- 2 cups sugar
- 2 cups cake flour
- 2 tsp baking powder
- 1 & 1/2 tsp bicarbonate of soda
- 1/2 tsp salt
- 1/2 cup cocoa powder
Wet Ingredients:
- 2 tsp granulated coffee, dissolved in a cup of hot water
- 2 eggs
- 1 cup milk
- 1/2 cup oil
- 2 tsp vanilla essence
Instructions:
- Preheat the oven to 180°C.
- In a large bowl, sift together all the dry ingredients. Combine the milk with the coffee mixture and stir well.
- Add the wet ingredients to the dry ingredients, whisking until thoroughly combined.
- Pour the batter into a greased baking tin and bake for 35 minutes. Once baked, remove from the oven and allow to cool completely.
- Decorate the cooled cake with freshly whipped cream, milk chocolate shavings, berries, caramel, or a thick chocolate ganache made from melted chocolate and cream stirred together.
- The recipe is designed for a rectangle baking tin measuring 30-33cm, but you can also divide the batter into two standard round baking tins and bake for 20-25 minutes. For larger oven trays, simply double the ingredients.
