Ingredients:
- 6 slices of cooked bacon (or microwave bacon)
- 4 cooked and shredded chicken breasts
- 32 oz. bag of frozen tater tots
- 1/2 cup ranch dressing
- 1 cup milk
- 2 tbsp all-purpose flour
- 3 tbsp butter
- 1 1/2 cups shredded mild cheddar cheese
- Salt & pepper to taste
Instructions:
- Preheat oven to 425 degrees Fahrenheit.
- Cook chicken in a separate pan until done. Allow chicken to cool slightly, then shred using a mixer.
- In a small saucepan, melt butter over low heat. Whisk in flour, salt, and pepper to taste.
- Slowly whisk in milk, pouring a little at a time, until a creamy consistency is achieved. Add ranch dressing and mix well.
- Spray a 9×13 baking dish and layer with chicken, sauce, half of the cheese, and tater tots. Bake uncovered for 20 minutes.
- While the casserole bakes, crumble the cooked bacon and set aside.
- Once the tater tots are golden and crispy, top the casserole with the remaining cheese and crumbled bacon. Bake for an additional 5 minutes or until cheese is melted and bubbly.
