Ingredients:

Chicken:

  • 2 lbs boneless, skinless chicken thighs, cut into cubes
  • 3 tbsp cornstarch
  • ¼ cup vegetable oil, plus 2 tbsp or more as needed

Vegetables:

  • 2 bell peppers, sliced
  • 1 cup steamed green beans (see notes below)
  • ½ tbsp garlic cloves, minced
  • ¼ tsp ginger (optional)

Seasonings:

  • 1 tsp garlic powder (adjust for taste)
  • 1 tsp crushed red pepper
  • ⅛ tsp sesame oil
  • 1 ¼ cup sweet chili sauce

Instructions:

  1. In a large bowl, combine diced chicken with a tablespoon of oil, garlic powder, ½ tsp salt, pepper, and cornstarch. Ensure each piece of chicken is coated evenly.
  2. In a large skillet or wok over medium-high heat, heat 3 tablespoons of vegetable oil until glistening. Cook the chicken in small batches, turning often for even cooking. If the pan seems dry, add more oil as needed. Once done, set aside and repeat with the second batch until crispy or your desired texture.
  3. Add sliced bell peppers to the skillet and sauté until soft or to your preferred tenderness. Add minced garlic and cook until fragrant.
  4. Incorporate the cooked chicken, steamed green beans, sweet chili sauce, sesame oil, ginger, and crushed red peppers to the skillet. Stir until everything is well-coated in the chili sauce.
  5. Serve the stir fry immediately over rice for a delightful and flavorful meal.
