Cherry Cheesecake Lush
Ingredients:
- 1 package (14 ounces) golden Oreos, crushed in a food processor
- 1/3 cup melted salted butter
- 1 tablespoon butter (for preparing the pan)
- 8 ounces cream cheese, softened to room temperature
- 3/4 cup granulated sugar
- 16 ounces frozen whipped topping, thawed
- 2 small boxes cheesecake-flavored instant pudding mix
- 3 cups whole milk
- 2 large cans cherry pie filling
- 1 cup chopped pecans or walnuts
Instructions:
- Preheat oven to 350°F (175°C). Butter the inside of a 9×13-inch baking dish and set aside.
- In a food processor, crush the golden Oreos until they form small crumbs.
- Add the melted butter to the crushed cookies and pulse until well combined.
- Press the cookie mixture into the bottom of the prepared baking dish, making the layer as even as possible.
- Place the crust in the freezer for 10 minutes while preparing the filling.
- In a bowl, beat together the cream cheese, sugar, vanilla extract, and 1 cup of whipped topping until smooth.
- Spread this cream cheese mixture evenly over the cookie crust and return the dish to the freezer for another 10 minutes.
- In another bowl, combine the instant pudding mix, milk, and 1/2 cup of whipped topping. Whisk until the mixture begins to thicken.
- Spread the pudding mixture over the chilled cream cheese layer, smoothing it evenly, and chill for 30 minutes or until set.
- After 30 minutes, carefully pour the cherry pie filling over the pudding layer to avoid mixing the layers.
- Carefully spread the remaining whipped topping over the entire dessert.
- Top with chopped pecans or walnuts and chill for 1 to 2 hours before serving.
