Cherry Bars Recipe
Ingredients:
- 3/4 cup softened butter
- 1 cup packed brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup whole wheat flour
- 1 cup unbleached all-purpose flour
- 2 teaspoons baking powder
- 2 cups rolled oats
- 1 cup cherry jam (Double Fruit type)
Preparation:
- In a large bowl, using an electric mixer, cream together the softened butter and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the whole wheat flour, all-purpose flour, and baking powder. Gradually add the dry ingredients to the butter mixture, mixing on low speed until combined.
- Stir in the rolled oats using a wooden spoon until evenly distributed.
- Reserve 1/2 cup (125 ml) of the oat mixture. Press the remaining oat mixture into a lightly buttered 13″ x 9″ (33 cm x 23 cm) baking pan.
- Spread the cherry jam evenly over the oat mixture in the pan. Sprinkle the reserved oat mixture on top.
- Bake in a preheated 350°F (180°C) oven for approximately 35 minutes, or until the top is lightly browned.
- Allow the pan to cool completely on a wire rack before cutting into bars.
