Cherry Bars Recipe

Ingredients:

  • 3/4 cup softened butter
  • 1 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 cup unbleached all-purpose flour
  • 2 teaspoons baking powder
  • 2 cups rolled oats
  • 1 cup cherry jam (Double Fruit type)

Preparation:

  1. In a large bowl, using an electric mixer, cream together the softened butter and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  2. In a separate bowl, whisk together the whole wheat flour, all-purpose flour, and baking powder. Gradually add the dry ingredients to the butter mixture, mixing on low speed until combined.
  3. Stir in the rolled oats using a wooden spoon until evenly distributed.
  4. Reserve 1/2 cup (125 ml) of the oat mixture. Press the remaining oat mixture into a lightly buttered 13″ x 9″ (33 cm x 23 cm) baking pan.
  5. Spread the cherry jam evenly over the oat mixture in the pan. Sprinkle the reserved oat mixture on top.
  6. Bake in a preheated 350°F (180°C) oven for approximately 35 minutes, or until the top is lightly browned.
  7. Allow the pan to cool completely on a wire rack before cutting into bars.

NOTE: Adjust baking time as needed based on your oven’s temperature accuracy. Enjoy these delicious cherry bars as a sweet treat!
