Cheese Bunuelos Recipe
Ingredients:
- 3 cups vegetable oil for frying
- 1 1/2 cups grated cotija cheese (ALDI brand recommended, approximately 125 grams)
- 1 cup corn starch (about 100 grams)
- 2 tablespoons Cassava flour (approximately 25 grams)
- 1 egg
- 4 tablespoons whole milk
- 1 teaspoon baking powder
- 1 teaspoon sugar
Instructions:
- In a frying pot (2.5-quart Dutch oven works well), heat vegetable oil over medium heat until it reaches 350 Fahrenheit or 175 Celsius.
- In a bowl, combine corn starch, cassava flour, sugar, and baking powder. Whisk until thoroughly mixed.
- Add grated cotija cheese to the dry mixture and mix well.
- Incorporate the egg and milk, then knead the dough until achieving a smooth, playdough-like consistency.
- Form small round balls, approximately 1.5 inches in diameter or 30 grams each.
- Carefully place the dough balls into the frying oil, ensuring it maintains a temperature around 350 Fahrenheit. Adjust heat if needed.
- Fry the bunuelos for about 6 minutes or until they turn golden brown.
- Remove from the oil and transfer them to a plate lined with paper towels to absorb excess oil.
- Allow the bunuelos to cool for approximately 10 minutes before serving.
