Carrot Cakes

Ingredients:

  • 4 cups freshly grated carrots
  • 1 cup raisins
  • 2 eggs
  • 1 cup granulated sugar
  • 1 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp ground cinnamon
  • 1 cup chopped walnuts

Method:

  1. Combine grated carrots and granulated sugar in a medium bowl; let it sit for 50 minutes and then incorporate the raisins.
  2. Preheat the oven to 350°F and grease the baking tray.
  3. In a large bowl, blend together sugar, vegetable oil, eggs, vanilla, and stir in the crushed pineapple. In a separate bowl, combine flour, baking soda, salt, and cinnamon; gently fold this mixture into the carrot mixture along with the chopped walnuts.
  4. Bake for 45 to 55 minutes. Remove from the oven and allow it to cool before serving.
