Carrot Cakes
Ingredients:
- 4 cups freshly grated carrots
- 1 cup raisins
- 2 eggs
- 1 cup granulated sugar
- 1 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup crushed pineapple
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 2 tsp ground cinnamon
- 1 cup chopped walnuts
Method:
- Combine grated carrots and granulated sugar in a medium bowl; let it sit for 50 minutes and then incorporate the raisins.
- Preheat the oven to 350°F and grease the baking tray.
- In a large bowl, blend together sugar, vegetable oil, eggs, vanilla, and stir in the crushed pineapple. In a separate bowl, combine flour, baking soda, salt, and cinnamon; gently fold this mixture into the carrot mixture along with the chopped walnuts.
- Bake for 45 to 55 minutes. Remove from the oven and allow it to cool before serving.
