Carrot Cake Roll with Cream Cheese Filling

Ingredients:

  • For the carrot cake:
    • 3 large eggs
    • 2/3 cup sugar
    • 2 tablespoons vegetable oil
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon salt
    • 1 teaspoon baking powder
    • 1 teaspoon ground ginger
    • 1/4 teaspoon nutmeg (optional)
    • 2 teaspoons cinnamon
    • 3/4 cup cake flour
    • 2 cups shredded carrots (drained if excessively moist)
    • Powdered sugar for rolling
  • For the cream cheese filling:
    • 6 oz cream cheese
    • 4 tablespoons unsalted butter, at room temperature
    • 2 cups powdered sugar
    • 1 additional teaspoon vanilla extract

Directions:

  1. Prepare the Cake Roll:
    • Preheat the oven to 350°F.
    • Generously spray a 10 x 15-inch jelly-roll pan with cooking spray and line it with parchment paper, then spray the paper as well and finely dust it with flour. Set aside.
    • Beat eggs on high speed for 3 minutes until frothy. Add sugar and continue beating for 3-4 minutes until pale and foamy. Mix in vanilla extract and vegetable oil until well combined.
    • In a separate bowl, whisk together flour, salt, baking powder, ginger, nutmeg, and cinnamon. Gently fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
    • Pour the batter into the prepared pan, spreading it evenly with a spoon. Bake for 15-16 minutes until set yet tender.
    • While the cake is baking, lay out a clean kitchen towel and generously sprinkle powdered sugar over it.
    • Once the cake is baked, immediately invert it onto the prepared towel. Carefully peel off the parchment paper, then starting from the short end, tightly roll the cake along with the towel. Allow it to cool completely for a few hours.
  2. Prepare the Cream Cheese Frosting:
    • While the cake is cooling, prepare the cream cheese filling. In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese and butter until smooth. Add the vanilla extract, then gradually add the powdered sugar, beating until the mixture is smooth and creamy.
  3. Assemble the Cake Roll:
    • Once the cake has cooled completely, carefully unroll it from the towel.
    • Evenly spread the prepared cream cheese filling over the surface of the cake.
    • Gently roll the cake back up, this time without the towel, into a tight spiral.
    • Refrigerate the cake roll for at least 1 hour to allow it to firm up slightly.
    • Before serving, dust the top of the cake roll with powdered sugar for a finishing touch.
