Broccoli Cheese Patties
Ingredients
- 2 cups steamed and finely chopped broccoli florets
- 1 cup grated cheddar cheese
- 1/2 cup low-carb breadcrumbs
- 2 eggs, beaten
- 2 tablespoons grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- Olive oil for frying
Preparation
- Combine Ingredients: In a large mixing bowl, mix together the chopped broccoli, cheddar cheese, breadcrumbs, beaten eggs, Parmesan cheese, minced garlic, onion powder, salt, and pepper until well combined.
- Heat Oil: In a large skillet, heat a small amount of olive oil over medium heat.
- Form Patties: Using your hands, take a small handful of the mixture and shape it into a patty. Ensure each patty is firm and holds together. Repeat until all the mixture is used.
- Cook Patties: Place the patties in the heated skillet, ensuring there’s enough space between them. Cook for approximately 3-4 minutes on each side, or until they are golden brown and crispy.
- Drain Excess Oil: Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil.
- Serve: Enjoy the patties warm as an appetizer, side dish, or a vegetarian burger alternative.
