Bread and Butter Pudding Recipe

Ingredients (Serves 8)

  • 8 slices of bread
  • ⅓ cup raisins
  • 2 tsp cinnamon
  • 1 ½ cups milk
  • ¼ cup heavy whipping cream
  • 2 large eggs
  • ¼ cup granulated sugar, plus extra for topping
  • 2 tbsp softened butter

Instructions

  1. Begin by preheating your oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. Prepare the bread by removing the crusts and spreading butter on one side of each slice. Cut the slices in half diagonally to form triangles.
  3. Grease a 9×9 baking dish and arrange a layer of bread slices, buttered side up, at the bottom of the dish.
  4. Sprinkle half of the raisins and cinnamon over the layer of bread.
  5. Place another layer of bread on top, followed by the remaining raisins and cinnamon.
  6. In a saucepan, gently warm the milk and heavy whipping cream over low heat. Be careful not to let it boil.
  7. In a separate bowl, whisk together the eggs and sugar until well combined.
  8. Slowly pour a small amount of the warmed milk mixture into the bowl with the eggs and sugar, whisking continuously to temper the eggs.
  9. Once tempered, pour the egg mixture back into the saucepan with the remaining milk mixture, whisking constantly.
  10. Remove the saucepan from heat and pour the custard mixture evenly over the bread layers in the baking dish. Allow it to sit for 30 minutes to allow the bread to absorb the custard.
  11. Sprinkle some additional granulated sugar over the top of the pudding before placing it in the preheated oven.
  12. Bake for approximately 30 minutes or until the pudding is golden brown and set.
  13. Once baked, remove from the oven and let it cool slightly before serving.
