Ingredients:

Crumb Cake:

  • 3 and 1/3 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2/3 cup cold butter, cut into cubes
  • Grated zest from 1 lemon (optional)
  • 1/3 cup light brown sugar
  • 1/3 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract

Blueberry Cheesecake Filling:

  • 8 oz. mascarpone cheese
  • 8 oz. cream cheese, softened
  • ½ cup + 2 tablespoons caster sugar
  • 2 tablespoons cornstarch
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 and 2/3 cups blueberries

Glaze:

  • ½ cup powdered sugar
  • 2–3 teaspoons milk

Instructions:

  1. Preheat the oven to 350°F (175°C). Line the bottom of a 9-inch springform pan with parchment paper, and spray the bottom and sides of the pan with nonstick cooking spray. Set aside.
  2. In a large bowl, combine the flour, baking powder, salt, brown sugar, granulated sugar, and lemon zest. Cut in the cold butter using your hands, a fork, or a mixer until the mixture becomes grainy.
  3. Add the eggs and vanilla extract, and mix until crumbly. If the mixture seems too sandy, gently squeeze it with your fingers to form pea-sized crumbs.
  4. Press about two-thirds of the crumb mixture into the bottom and sides of the prepared pan, creating a crust about 1 ½ inches high. Place the pan and the remaining crumbs in the fridge while preparing the filling.
  5. For the filling, mix together the cream cheese, mascarpone, vanilla extract, sugar, and cornstarch until just combined. Add the eggs and mix gently until incorporated, being careful not to overmix.
  6. Pour half of the cheesecake filling onto the chilled crust, and scatter about 2/3 cup of blueberries over the filling. Spread the remaining cheesecake mixture over the blueberries, and then sprinkle the remaining crumbs on top.
  7. Bake the cake at 350°F (175°C) until golden brown and a toothpick inserted into the center comes out clean, about 65-75 minutes. If the top begins to brown too quickly, tent it with aluminum foil.
  8. While the cake is cooling, prepare the glaze by stirring together the powdered sugar and milk or cream. Adjust the consistency as needed by adding more powdered sugar for thickness or more milk for a thinner glaze.
  9. Once the cake has cooled, drizzle the glaze over the top before serving. Enjoy the delightful combination of flavors and textures in every bite!
