  • 2 cups fresh blueberries
  • 1/2 cup buttermilk

Note: For homemade buttermilk, combine 1 tablespoon of vinegar or lemon juice with enough milk to reach the 1-cup line. Let it sit for five minutes, then use 1/2 cup of the mixture for this recipe.

Instructions:

  1. Preheat the oven to 350ºF (175ºC). Prepare a baking dish by greasing it lightly.
  2. In a mixing bowl, cream together the butter, lemon zest, and 7/8 cup of sugar until light and fluffy.
  3. Add the egg and vanilla extract to the butter mixture, and beat until well combined.
  4. In a separate bowl, toss the blueberries with 1/4 cup of flour until evenly coated.
  5. In another bowl, whisk together the remaining flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, until fully incorporated.

  8. Transfer the batter to the prepared baking dish, spreading it out evenly.
  9. Sprinkle the top of the batter with the remaining 1 tablespoon of sugar.
