Blooming Quesadilla Ring
Ingredients:
- 2 cups cooked and shredded chicken
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 jalapeño, chopped
- 1 cup taco sauce
- 20 taco-size tortillas
- 3 cups shredded cheddar cheese
- 3 cups shredded Monterey jack cheese
Instructions:
- Preparation: Preheat the oven to 375˚F. Line a baking sheet with parchment paper. In a large bowl, combine the cooked chicken, chopped onion, red bell pepper, jalapeño, and taco sauce. Set aside.
- Assembly: Cut each tortilla in half. Distribute about 2 tablespoons each of cheddar cheese, Monterey Jack cheese, and the chicken mixture evenly onto each tortilla half. Roll the tortillas into cones, starting from the cut edge, ensuring the ingredients are enclosed.
- Arrangement: Place a wide mouth jar or glass in the center of the baking sheet. Surround the jar with approximately 13 tortilla cones, positioning the points inward, touching the jar. Sprinkle a layer of cheddar and Monterey Jack cheese over the cones. Repeat the layering process with the remaining cones, creating two additional layers, and finish with a final layer of cheese.
- Baking: Remove the jar from the center of the ring. Bake in the preheated oven until the cheese is melted and the edges of the tortillas are crispy, typically 15-20 minutes.
- Serving: Carefully transfer the blooming quesadilla ring to a serving platter. Fill the center with your preferred dip and garnish as desired. Serve immediately and enjoy!
