Birria Wings with Consomé
Ingredients:
- 1/4 cup sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon hot chili-garlic sauce (e.g., sriracha)
- 2 teaspoons dark sesame oil
- 1 teaspoon grated fresh ginger
- 16 chicken wings, wing tips removed
- Vegetable oil
- Kosher salt
- Fresh ground black pepper
Instructions:

Prepare the Glaze:
In a small bowl, whisk together sweet chili sauce, soy sauce, hot chili-garlic sauce, dark sesame oil, and grated fresh ginger. -
Prep the Chicken Wings:
Trim excess skin from the edges of the chicken wings. Lightly brush or spray with vegetable oil and season with salt and pepper to taste. -
Grill the Wings:
Grill the chicken wings over Direct Medium heat until the skin begins to crisp, approximately 10 minutes, turning once or twice. -
Apply Glaze:
Brush the wings with the prepared glaze and continue grilling until the meat is no longer pink at the bone, approximately 8 to 10 minutes. Turn and brush with the glaze 2 or 3 times during this process. -
Serve Warm:
Once cooked, serve the Birria Wings warm.
Recipe Notes:
An alternative cooking method is baking: Bake wings at 375°F for 45 minutes, then apply the sauce and bake again at 400°F for 20 minutes until the skin is brown, and the sauce thickens.
