Banana Pudding Cake Recipe
Ingredients
Cake:
- 2 sticks butter, softened
- 1 3/4 cups sugar
- 3 eggs + 2 egg whites
- 3 tsp vanilla
- 3 cups all-purpose flour
- 3 1/2 tsp baking powder
- 1.34oz box instant, sugar-free banana pudding mix
- 1 cup milk
Filling:
- 1.34oz box instant, sugar-free vanilla pudding mix
- 1 1/4 cups skim milk
- 1 cup Cool Whip (or whipped cream)
To brush on layers:
- 1 Tbsp sweetened condensed milk
- 1 Tbsp skim milk
Additional Needs:
- 2-3 medium ripe bananas
- 3-4 cups Cool Whip for frosting
Instructions
Step 1: Make the Cake
- Preheat the oven to 350°F (175°C). Prepare three 8-inch round cake pans by lining the bottoms with parchment paper.
- Cream the butter and sugar together until light and fluffy.
- Gradually beat in the eggs and egg whites, one at a time, followed by the vanilla extract.
- In a separate bowl, combine the flour, baking powder, and banana pudding mix. Gradually add this to the wet ingredients in three additions, mixing just until combined. Be careful not to overmix.
- Stir in the milk until the batter is smooth.
- Divide the batter evenly among the prepared pans.
- Bake for 22-25 minutes, or until the cakes are golden and begin to pull away from the sides of the pans.
- Allow the cakes to cool in the pans for 15 minutes, then remove from the pans and let cool completely on a wire rack for 1-2 hours.
Step 2: Assemble the Cake
- Level each cake layer.
- Place the first layer on a cake plate and brush lightly with the milk mixture.
- Arrange banana slices on top of the cake layer.
- Spread 1/3 to 1/2 of the filling mixture over the bananas.
- Add the next cake layer on top of the filling and repeat the process with the milk mixture, bananas, and filling. Place the final cake layer on top.
Step 3: Frost the Cake
- Frost the entire cake with Cool Whip.
- Decorate as desired. For example, you can crush mini Nilla wafers and sprinkle them on top, and place whole wafers along the sides of the cake.
- For added decadence, consider adding Nilla wafers between the layers.
