Banana Cinnamon Cornflake Delight

Indulge in the perfect harmony of banana sweetness and cinnamon spice with this delectable bowl of cornflakes.

Ingredients:

  • 2 cups wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed ripe banana
  • 2 cups cornflakes
  • 1/2 cup whipped butter or ghee
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup coarsely chopped cashews

Directions:

  1. In a mixing bowl, combine flour, baking powder, baking soda, and salt. Set aside.
  2. In another bowl, gently fold mashed banana into the cornflakes. Allow to sit for 5 minutes until the flakes are slightly softened.
  3. In a large mixing bowl, cream together the butter and sugar until smooth. Beat in the eggs.
  4. Gradually add the banana-cornflake mixture and chopped cashews to the butter-sugar mixture. Fold in the flour mixture until just combined.
  5. Pour the batter into a greased 9 x 5 x 3-inch baking pan. Smooth the top with a spatula.
  6. Bake at 350 degrees Fahrenheit for 1 hour or until the center is set. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Wrap in plastic wrap and chill before slicing.
