Banana Cinnamon Cornflake Delight

Ingredients:
- 2 cups wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup mashed ripe banana
- 2 cups cornflakes
- 1/2 cup whipped butter or ghee
- 3/4 cup sugar
- 2 eggs
- 1/2 cup coarsely chopped cashews
Directions:
- In a mixing bowl, combine flour, baking powder, baking soda, and salt. Set aside.
- In another bowl, gently fold mashed banana into the cornflakes. Allow to sit for 5 minutes until the flakes are slightly softened.
- In a large mixing bowl, cream together the butter and sugar until smooth. Beat in the eggs.
- Gradually add the banana-cornflake mixture and chopped cashews to the butter-sugar mixture. Fold in the flour mixture until just combined.
- Pour the batter into a greased 9 x 5 x 3-inch baking pan. Smooth the top with a spatula.
- Bake at 350 degrees Fahrenheit for 1 hour or until the center is set. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Wrap in plastic wrap and chill before slicing.
